Not yet. The estimate shows your own words on how to pay you, and you record the deposit when it arrives.
What they approved is locked. Revise it into a fresh estimate, so there is never an argument about what was agreed.
Yes. Print it or hand over the PDF and it is marked sent, and you record their yes or no by hand. Reminders go by email, so for a customer with no email address you follow up yourself.
